At Home Buddha Bowls

This post is for all of you health conscious individuals with crazy busy schedules, and no time for cooking, who are in need of nutritious and delicious on-the-go options. All you need is about an hour on Sunday to put some effort into chopping up fruits and vegetables and getting a little creative.

Inspired by buddha bowls from the farmers market, I figured why can’t we do this from home?! Please, put your own spin on it and let me know how it goes!

Lunch

Okay, Trader Joe’s may be your new best friend here. Buy a couple bags of riced cauliflower. If you prefer, you can steam or cook the cauliflower however you would like. Personally, the less work for me, the better. I simply pour in about a cup of riced cauliflower uncooked (I usually microwave this later when eating anyway). Second chop up some lettuce and throw that on top. Toss in a cooked and chopped sweet potato, shredded chicken, chopped cherry tomatoes, and pecans. Later I add sliced avocado and Trader Joe’s Green Goddess Salad Dressing (amazinggggg and made with all fresh ingredients). Pro tip: if you heat the bowl before eating, remove the lettuce and add back in when you mix everything up! Enjoy!

Snacks:

  1. A spin on avocado toast: layer brown rice cakes, avocado, tomato slices, and a pinch of salt
  2. Put fresh cut strawberries and blueberries in a mason jar, which both looks delicious and takes care of that sweet tooth!
  3. Corn, cucumbers, sliced grapes, and sliced apple — may seem like a weird combination but satisfies your vegetable and fruit servings and tastes great!

More ideas to come! Always remember that if you are excited to eat what you have prepared, you are more likely to stick with your healthy choices! Get excited by prepping in cute mason jars and adding lots of color to your meals! Use a combination of healthy sugars (fruits) and vegetables and prepare enough meals to last you for the week. Healthy nutrition doesn’t have to be difficult, you just have to take that little extra time to prepare.
